Meats are usually marinated for a short time before being fried in a sauce of vinegar, oil, garlic, and onions (adobado). Specialties include paella spiced saffron colored rice, garnished with shrimp, crab, Spanish sausage, and pieces of fried pork, beef, chicken, and lamb. |
