| The Indian cuisine is as diverse as its culture, languages and regions The staples of Indian cuisine are rice, atta (a special type of whole-wheat flour) and at least five dozen varieties of pulses. The subtle blend of particular spices such as Coriander, Cumin, Fenugreek, Asafoetida etc., give Indian food its distinct flavor. |

| Nepalese cooking is most heavily influenced by India and Tibet. Rice, the primary staple, is often mixed with vegetables, lentils, and potatoes to form a stew. Indian-style flatbreads are predominate, but noodles and dumplings, reflecting China’s influence, also are prevalent. Chutneys and pickled dishes are common. Key flavorings are ginger, garlic, and onion. Please note that beef is not eaten. |
