The cuisine is traditional Ghanaian and dishes are freshly prepared every day by chef Zina (from Ghana) using only the finest authentic African ingredients. The menu is complemented by a daily specials board and for those unfamiliar with this cuisine – dishes such as Kellywelly, Banku or Tuo Shin Kafa – there is always friendly advice on hand from proprietors Mohammed and Hajia. | African cuisine combines traditional fruits and vegetables, exotic game and fish from the oceans that surrounds her. Its impossible to categorize "African food" just as it would be impossible to state the cuisine of any continent by one name. However the prime characteristic of native African meals is the use of starch as a focus. This is accompanied by stew containing meat or vegetables, or both. |

| Soups are the primary component in Ghanaian cuisine and are eaten with either fufu (pounded plaintain, cassava or yam), kokonte (cassava meal cooked into a paste), banku (fermented corn dough)or rice. In keeping with the spicy tradition of most West African meals, an array of spicy ingredients such as ground dried pepper, hot pepper, shito, akakadro, and many other spices are used in preparing meals. |
